What Queenstown's trade waste rules mean for your kitchen

Queenstown Lakes District Council controls discharges to the district's wastewater network under the Integrated Three Waters Bylaw 2020, which superseded the earlier Trade Waste Bylaw 2014. Trade waste consents are required for discharges classified as Controlled or Conditional Trade Waste — a category most commercial kitchens in the district fall into.

Frankton premises generally have off-street access, roller doors and service yards, which means larger containers are viable and collections are quick. Queenstown CBD kitchens have small back-of-house areas, shared service lanes and time-restricted loading, so container choice there is decided by what can physically leave the premises within the available window — often two smaller containers rather than one large one.

Our scheduling follows your actual fill rate rather than a fixed date. Queenstown has a winter peak from roughly June to September and a summer peak from roughly December to February, with quiet shoulder periods in May and October–November. When your fill rate climbs the next collection moves forward automatically; when it drops the interval stretches. That happens four times a year without you having to arrange anything.

Yes, and Queenstown is the only market where it matters most during the busy season. Used cooking oil and beef tallow thicken as temperatures fall and can effectively solidify in a hard frost. Because Queenstown's coldest months are also its busiest, we site containers somewhere sheltered and secure, size them for what can be handled cold, and shorten the collection interval through winter so nothing sits long enough to set.

Almost certainly. Under the Queenstown Lakes District Council Integrated Three Waters Bylaw 2020, a grease trap must be installed and maintained wherever trade waste includes, or is likely to include, fats, grease or oils in excess of 100 grams per 1,000 litres each day. That threshold captures essentially any commercial fryer operation. Marae, churches, public halls and school catering kitchens are also required to fit grease traps and hold a trade waste consent.

No. Discharges to the Queenstown Lakes wastewater network are controlled under the Integrated Three Waters Bylaw 2020, and fats, oils and grease from commercial kitchens are covered. Spent fryer oil must be collected separately — a grease trap is for incidental fat off plates and pans, not for fryer oil.

Yes. Wanaka is scheduled on its own route rather than as an add-on to a Queenstown run, covering the Ardmore Street lakefront, Three Parks, Albert Town, Hāwea and Cardrona. Arrowtown, Lake Hayes, Lake Hayes Estate and Millbrook are on the Queenstown district route.
