Used cooking oil collection is a scheduled service that removes spent frying oil and kitchen fat from a commercial kitchen and sends it to a certified processing facility for recycling. Auckland restaurants need it because used oil cannot go down the drain or into general waste under trade waste rules. ### How does Full Drum schedule used cooking oil pickups in Auckland? Full Drum uses proprietary routing software that monitors your collection history and predicts when your drum will be full. Pickups are scheduled proactively — before your container reaches capacity. You do not need to call us to arrange a collection. ### What types of business qualify for UCO collection services? We service restaurants, cafés, Asian takeaways, fish and chip shops, fast food outlets, food trucks, canteens, supermarket delis, food processing factories, and large-volume corporate kitchen operations across Auckland and all of New Zealand — the North and South Island. ### What happens to my cooking oil after it is collected? Every litre of used cooking oil and kitchen fat collected by Full Drum is transported to a certified processing facility. Your collection certificate documents exactly what happened to your oil and fat after pickup. ### Can I also receive clean frying oil deliveries through FreshDrum? Yes. Through FreshDrum, Full Drum delivers premium filtered frying oil on the same collection run. One partner, one invoice — clean oil in, used oil out. ### Which Auckland suburbs and New Zealand regions do you cover? Full Drum provides used cooking oil collection across all of Auckland including East Tamaki, Flat Bush, Manukau, Botany, Howick, Papatoetoe, Māngere, Penrose, Otahuhu, Pukekohe, Takanini, Papakura, Wiri, Panmure, Hamilton, and Waikato. We also cover all of New Zealand — the North and South Island — contact us to confirm your area. ## Areas we serve across Auckland & Waikato ## Cost For most commercial kitchens the container is supplied free and there is no charge for collection. Depending on volume and oil quality a per-litre payment may apply. Rates depend on volume, location and the condition of the oil. We supply the drum, we track how fast your kitchen fills it, and we schedule the pickup before it overflows. In a city where a quiet June and a flat-out January are the same business, that matters more here than almost anywhere: our scheduling follows your real fill rate, not a fixed calendar. Every litre goes to a certified processing facility, with a disposal certificate issued automatically. Used cooking oil collection in Tauranga, built for a season that does not sit still. ## Used cooking oil collection built for Tauranga kitchens Tauranga is the fastest-changing hospitality market Full Drum services, and the least suited to a fixed collection schedule. A Mount Maunganui café that fills half a drum a month through winter can fill two in January. A Papamoa takeaway follows the school holidays. A CBD kitchen on The Strand follows the office week, then jumps on a cruise day. Set the calendar once and it will be wrong within a season. Full Drum has collected used cooking oil and kitchen fat from New Zealand kitchens since 2008. In Tauranga that means our routing software watches your fill rate as it moves, and brings the pickup forward when your volume climbs — without you phoning anyone. A sealed container sized to your premises and your access, supplied at no charge, and a disposal certificate issued automatically after every collection. No lock-in for the first three months. If you run a fryer between the Mount and Tauriko, we will come and get what comes out of it. ## What Tauranga's trade waste rules mean for your kitchen Tauranga City Council controls what businesses may discharge to the city's wastewater system under the Trade Waste Bylaw 2019. Trade waste is any liquid waste discharged to the Council's wastewater system from industrial or business premises — which includes every commercial kitchen in the city. Where to check the detail: Tauranga City Council publishes its trade waste information and the Trade Waste Bylaw 2019 at tauranga.govt.nz. Western Bay of Plenty District Council publishes its own at westernbay.govt.nz. Consent requirements and fees change — confirm current requirements for your premises directly with the Council. This page is general guidance, not legal advice. Last reviewed: September 2026. ## The Tauranga regions we collect from ### Mount Maunganui Areas: Maunganui Road, Marine Parade, Bayfair, Omanu, Hewletts Road, Totara Street, Arataki ### Tauranga CBD Areas: The Strand, Devonport Road, Willow Street, Wharf Street, Elizabeth Street ### Papamoa Areas: Papamoa Beach, Papamoa East, Palm Beach, Fashion Island, Te Puke Highway ### Bethlehem & Otumoetai Areas: Bethlehem, Otumoetai, Matua, Brookfield, Judea ### Greerton & Tauriko Areas: Greerton, Gate Pa, Pyes Pa, Tauriko, Ōropi Road Also collecting across Welcome Bay, Maungatapu, Ohauiti, Matapihi and Te Maunga, and out into the Western Bay including Te Puke, Katikati, Ōmokoroa and Waihī Beach. Note that premises outside the Tauranga City boundary fall under Western Bay of Plenty District Council's own trade waste rules. ## Why Tauranga kitchens overflow — and how we stop it Most cooking oil collection services wait for you to call. That works right up until the week you are too busy to notice the drum is full — which in Tauranga is reliably the last week of December. Full Drum works the other way around. Our in-house routing software tracks your collection history, learns your kitchen's actual fill rate, and schedules the next pickup before the container reaches capacity. You do not manage dates. You do not phone us. The container gets swapped, a clean one goes in its place, and the certificate lands in your inbox. ## How our Tauranga collection service works — step by step 1. Free container assessment. We visit your Tauranga, Mount Maunganui or Papamoa premises at no cost, look at your weekly output and your access, and recommend the container size and collection frequency that fit. In Tauranga we look at your seasonal pattern as well as your current volume — the right container is the one that works in January, not just the one that works today. 2. Container installed. We deliver and install a sealed collection drum, wheelie bin or 1000-litre pod at a spot that suits your kitchen and your loading access. The container is supplied at no charge and clearly labelled. 3. Scheduled collection, before it fills. Our routing software predicts your fill date and books the pickup ahead of it. Your driver swaps the full container for a clean one — no decanting, no mess, no interruption to service. As your season changes, the interval changes with it. 4. Certificate issued automatically. A digital disposal certificate arrives after every pickup, showing date and volume collected. Ready for your council, your insurer, your food safety audit or your sustainability reporting. ## The Tauranga kitchens we collect from - Restaurants: Maunganui Road, The Strand, Papamoa Beach - Cafés and bakeries: small-format containers for tight premises - Takeaways and fish and chip shops: the highest fryer turnover in the city, on the shortest intervals - Food trucks and mobile traders: flexible pickup points, no fixed address needed - Hotels, caterers and event venues: multi-site coordination, one invoice - School and hospital canteens: term-time cadence, full compliance documentation - Clubs, pubs and sports venues: event-driven volume, handled We collect used cooking oil and kitchen fat only. They call because the pickups stopped being reliable, because nobody ever sends the paperwork, or because the company they signed with is no longer trading. Switching is straightforward. We assess your site at no cost, install our container, and coordinate around your existing arrangement so there is never a gap where your kitchen has nowhere to put the oil. Your old provider collects their container in their own time. And you are not locked in with us for the first three months — if we do not turn up when we said we would, you are free to walk. ## Frequently asked questions — used cooking oil collection Tauranga ### Do you collect in Tauranga and Mount Maunganui? Yes. Full Drum collects across Tauranga city, Mount Maunganui, Papamoa, Bethlehem, Otumoetai, Greerton and Tauriko, and out into the Western Bay of Plenty. Full Drum services all of New Zealand, North Island and South Island, on scheduled routes. Call 0508 385537 to confirm the next available collection in your area. ### Do you collect from Maunganui Road and the Mount beachfront? Yes. Maunganui Road, Marine Parade, Bayfair and Omanu are on a standing route, collected in an early window before the parking fills and before service starts. We also collect the port and industrial side of Mount Maunganui — Hewletts Road, Totara Street and Newton Street — where premises generally have off-street access and can take larger containers. ### How do you handle the summer rush? Our scheduling follows your actual fill rate rather than a fixed date. When your volume climbs through the summer, the next collection moves forward automatically; when the season turns, the interval relaxes again. Tauranga and Mount Maunganui have one of the sharpest seasonal swings in New Zealand, so this matters more here than almost anywhere. ### Can I pour used cooking oil down the drain in Tauranga? No. Tauranga City Council controls discharges to the wastewater system under its Trade Waste Bylaw 2019, and fats, oils and grease from commercial kitchens are covered. Spent fryer oil must be collected separately — a grease trap is for incidental fat off plates and pans, not for fryer oil. ### Do I still need a grease trap if you collect my oil? Yes. Pre-treatment is a council requirement for food premises, and a grease trap catches the incidental fat that comes off plates, pans and dishwashers. Scheduled used cooking oil collection keeps that trap working inside its design load — the two work together. Check your trap's sizing with Tauranga City Council if your menu or covers have grown since it was installed. ### Do you collect in Te Puke, Katikati and Ōmokoroa? Yes, we collect across the Western Bay of Plenty. Note that premises outside the Tauranga City boundary fall under Western Bay of Plenty District Council's trade waste rules rather than Tauranga City Council's, so your consent and grease trap requirements come from a different council. ### What happens to the oil after you collect it? It goes to a certified processing facility, where it is cleaned and recovered for industrial use. Nothing goes to landfill, and your certificate documents every collection. ### Do you collect engine oil? No. Full Drum collects used cooking oil and kitchen fat only — never engine, motor or automotive oil. ## Cost For most commercial kitchens the container is supplied free and there is no charge for collection. Depending on volume and oil quality a per-litre payment may apply. Rates depend on volume, location and the condition of the oil. We supply the drum, we track how fast your kitchen fills it, and we schedule the pickup before it overflows — you never have to remember to phone us. Every litre goes to a certified processing facility with documentation you can hand straight to your council or your auditor. Used cooking oil collection in Wellington, built around the thing that actually decides how a Wellington collection runs: access. ## Used cooking oil collection built for Wellington kitchens Wellington packs more hospitality into less space than anywhere else in New Zealand. A Te Aro kitchen might be down a flight of stairs in a heritage building with no rear access, twelve metres from a loading zone that is enforced to the minute. A Petone kitchen sits on a hundred-year-old shopfront strip with a rear lane you have to know about. A Porirua kitchen has a car park and a roller door. Same city region, three completely different collections. Full Drum has collected used cooking oil and kitchen fat from New Zealand kitchens since 2008. In Wellington that means we work out the access first and the container second — because in this city the access is what decides everything. A sealed drum sized to what will actually fit and actually move, a collection schedule built from your real fill rate rather than a fixed calendar, and a disposal certificate issued automatically after every pickup. No charge for the container. No lock-in for the first three months. If you run a fryer anywhere between Kilbirnie and Porirua, we will come and get what comes out of it. ## Three councils, one network: what the rules mean for your Wellington kitchen Here is something that catches out a lot of Wellington operators, especially anyone running more than one site. The Wellington region is served by a single wastewater network operator — Wellington Water — but the trade waste rules your kitchen has to meet come from your territorial council, and there are three of them across the areas we collect from. - Your kitchen is in: Wellington CBD, Newtown, Kilbirnie; Your bylaw: Wellington Trade Waste Bylaw 2016; Administered by: Wellington City Council - Your kitchen is in: Lower Hutt, Petone; Your bylaw: Hutt Valley Trade Wastes Bylaw 2016; Administered by: Hutt City Council, for Hutt City and Upper Hutt - Your kitchen is in: Porirua; Your bylaw: Porirua City Council's trade waste bylaw; Administered by: Porirua City Council Where to check the detail: Wellington City Council publishes the Trade Waste Bylaw 2016 and its trade waste consent process at wellington.govt.nz; Hutt City at huttcity.govt.nz; Porirua at poriruacity.govt.nz; Wellington Water at wellingtonwater.co.nz. Free container assessment. We visit your Wellington, Hutt Valley or Porirua premises at no cost, look at your weekly output and your access, and recommend the container size and collection frequency that fit. In Wellington we assess the access as carefully as the volume — stairs, service doors, loading zones and where a container can be sited safely out of the wind. Yes, we collect across the Wellington region — the CBD, Newtown, Kilbirnie and the eastern suburbs, Lower Hutt, Petone and Porirua. Full Drum services all of New Zealand, North Island and South Island, on scheduled routes. Call 0508 385537 to confirm the next available collection in your area. ### Which council's trade waste rules apply to my kitchen? It depends which city you are in, not which network. Wellington CBD, Newtown and Kilbirnie sit under the Wellington Trade Waste Bylaw 2016 administered by Wellington City Council. Lower Hutt and Petone sit under the Hutt Valley Trade Wastes Bylaw 2016 administered by Hutt City Council. Porirua operates its own trade waste bylaw and consent process. Wellington Water runs the wastewater network across all three. ### Can I pour used cooking oil down the drain in Wellington? No. Fats, oils and grease are controlled under the trade waste bylaws in every part of the Wellington region, and businesses discharging oil or grease may require a trade waste consent. Spent fryer oil must be collected separately — your grease trap is there for incidental fats off plates and pans, not for fryer oil. ### Do I still need a grease trap if you collect my oil? Yes. Wellington City Council requires grease traps to be fit for purpose, in working order, and cleaned by a council-approved contractor under a service contract. Hutt City and Porirua have equivalent expectations. Scheduled oil collection is what keeps that trap working inside its design load — the two work together. ### Where will you put the container in a small Wellington kitchen? That is exactly what the free assessment is for. Wellington premises are often tight, below street level, or exposed to serious wind, so we look at the access and the siting before we recommend a size. Sometimes the right answer is two smaller containers collected more often rather than one large one that cannot be moved. ### Do you collect in Lower Hutt, Petone and Porirua as well as Wellington city? Yes. Lower Hutt, Petone and Porirua are all on standing routes, along with Wellington CBD, Newtown and Kilbirnie. We also collect across Karori, Johnsonville, Tawa, Island Bay, Upper Hutt, Wainuiomata and north to the Kāpiti Coast. We supply the drum, we track how fast your kitchen fills it, and we schedule the pickup before it overflows — you never have to remember to phone us. Every litre goes to a certified processing facility with documentation you can hand straight to your council or your auditor. Used cooking oil collection in Christchurch, run the way a busy kitchen actually needs it: on time, out of the way, and off your list. ## Used cooking oil collection built for Christchurch kitchens Christchurch kitchens are not Auckland kitchens. The Central City rebuilt itself around tight service lanes and shared loading areas, the hospitality trade clusters hard into a handful of precincts, and the Canterbury winter does things to used cooking oil that a North Island operator never has to think about. Full Drum has collected used cooking oil and kitchen fat from New Zealand kitchens since 2008. In Christchurch that means a sealed drum sized to your premises and your access, a collection schedule built from your actual fill rate rather than a fixed calendar, and a disposal certificate issued automatically after every pickup. No charge for the container. No lock-in for the first three months. No chasing us. If you run a fryer in Christchurch, we will come and get what comes out of it. ## Christchurch's Trade Waste Bylaw 2025: what changed for your kitchen This is the part most Christchurch operators have not been told about, and it is why a casual approach to waste oil is riskier here than it was two years ago. Christchurch City Council adopted a new Trade Waste Bylaw 2025 in May 2025, and it came into force on 1 July 2025, replacing the 2015 bylaw. Where to check the detail: the Trade Waste Bylaw 2025 and the Council's grease trap guidance are both published on ccc.govt.nz. This page is general guidance, not legal advice — confirm your kitchen's obligations with the Council. Last reviewed: September 2026. ## The Christchurch regions we collect from We run scheduled collection routes across Christchurch every week, grouped into four regions. Find yours below — and if your kitchen sits just outside one of them, ask. The answer is almost always yes. ### Central Christchurch Areas: Central City, Lichfield, Cashel, Colombo, New Regent ### Riccarton Areas: Riccarton, Upper Riccarton, Ilam ### South Christchurch Areas: Sydenham, Addington, Wigram ### East Christchurch Areas: Linwood, Richmond, Bexley, Shirley Also collecting across Merivale, Papanui, Bishopdale, St Albans, Belfast, Halswell, Hornby, Sockburn, Woolston, Ferrymead, Sumner, New Brighton and Lyttelton — and out into wider Canterbury including Rolleston, Lincoln, Rangiora, Kaiapoi and Ashburton. Note that Selwyn and Waimakariri districts operate their own trade waste bylaws separate from Christchurch City Council's. ## Why Christchurch kitchens overflow — and how we stop it Most cooking oil collection services wait for you to call. Yes, we collect right across Christchurch — Central City, Riccarton, the southern suburbs and the east — as well as wider Canterbury. Full Drum services the whole of New Zealand, North Island and South Island, on scheduled routes. Call 0508 385537 to confirm the next available collection in your area. ### What does used cooking oil collection cost in Christchurch? For most commercial kitchens the container is supplied free and there is no charge for collection, and depending on your volume and the quality of the oil a per-litre payment may apply. The rate depends on volume, location and oil condition — call us for a figure for your kitchen rather than a number off a webpage. ### Can I pour used cooking oil down the drain in Christchurch? No. Christchurch City Council's Trade Waste Bylaw 2025 limits fats, oils and grease in trade waste discharged to the sewer to 200 g/m³ — down from 500 g/m³ under the previous bylaw. Fryer oil must be collected separately. Your grease trap is there for incidental fats, not for spent oil. ### Do I still need a grease trap if you collect my oil? Yes. Christchurch City Council requires food premises to have an approved, correctly sized grease or oil trap installed by a registered plumber. Scheduled oil collection is what keeps that trap working within its design load — the two work together. ### How often will you collect? It depends on your fill rate, and it changes with the season. A busy Christchurch takeaway might be weekly; a café might be monthly. Canterbury winters thicken used oil and tallow, so we typically shorten the interval through the colder months. We set the frequency at the assessment and adjust it as your actual data comes in. ### Which Christchurch areas do you cover? We collect across four regions. Central Christchurch: Central City, Lichfield, Cashel, Colombo and New Regent. Riccarton: Riccarton, Upper Riccarton and Ilam. South Christchurch: Sydenham, Addington and Wigram. East Christchurch: Linwood, Richmond, Bexley and Shirley. We also collect across Merivale, Papanui, Halswell, Hornby, Woolston, Sumner and Lyttelton, and out into wider Canterbury. ### What happens to the oil after you collect it? We supply the container, we track how fast your kitchen fills it, and we schedule the pickup before it overflows. Dunedin is the one city in New Zealand where two hospitality districts run on opposite calendars — North Dunedin follows the university year, the Octagon follows the cruise season — so a single citywide schedule is wrong in both. Ours follows your kitchen, not the city. Every litre goes to a certified processing facility, with a disposal certificate issued automatically. Used cooking oil collection in Dunedin, scheduled by your actual fill rate. ## Used cooking oil collection built for Dunedin kitchens Dunedin is a small city with an unusually complicated rhythm. A Castle Street takeaway and an Octagon restaurant are three kilometres apart and busy at opposite times of year. A South Dunedin bakery runs steadily through both. A St Clair café follows the weather. Set one collection schedule across all of them and most of your customers are on the wrong one. Full Drum has collected used cooking oil and kitchen fat from New Zealand kitchens since 2008. In Dunedin that means our routing software follows each kitchen's own fill rate rather than a citywide assumption — so a North Dunedin site stretches out over summer while an Octagon site tightens up, automatically, without anyone phoning anyone. A sealed container sized to your premises and your access, supplied at no charge, and a disposal certificate issued after every collection. No lock-in for the first three months. If you run a fryer between the University and the Esplanade, we will come and get what comes out of it. ## What Dunedin's trade waste rules mean for your kitchen Dunedin's rule is the most straightforward of any city in New Zealand, and the most commonly missed. If your business is engaged in the cooking, preparation or sale of food, Dunedin City Council requires you to hold a trade waste consent. There is no volume threshold to fall under and no conditional category to argue about — the requirement attaches to the activity. Where to check the detail: Dunedin City Council publishes its trade waste information, the Trade Waste Bylaw 2020 and its guidance on grease traps and FOG systems at dunedin.govt.nz. The Trade Waste Bylaw 2020 was adopted on 8 December 2020 and came into effect on 1 February 2021, replacing the 2008 bylaw. Confirm the requirements for your premises directly with the Council. Getting collection right here means recognising which one your kitchen is on. ## The Dunedin regions we collect from ### Central Dunedin Areas: Central City, George Street, The Octagon, Princes Street, Moray Place, Stuart Street ### North Dunedin & the University Areas: North Dunedin, Castle Street, Albany Street, Great King Street, Dundas Street, Otago University, Otago Polytechnic ### South Dunedin Areas: South Dunedin, King Edward Street, Andersons Bay, Caversham, St Kilda, Musselburgh ### Warehouse Precinct Areas: Warehouse Precinct, Vogel Street, Bond Street, Crawford Street, Jetty Street ### St Clair & the Esplanade Areas: St Clair, The Esplanade, St Kilda Beach, Forbury, Ocean Beach Also collecting across Mosgiel, Green Island, Port Chalmers, Roslyn, Māori Hill, Mornington, Dunedin Airport and the Otago Peninsula. We collect throughout Otago, including Balclutha and Milton — note that premises outside the Dunedin City boundary fall under their own district council's trade waste rules. ## Why Dunedin kitchens overflow — and how we stop it Most cooking oil collection services wait for you to call. That works right up until the week you are too busy to notice the container is full — which in Dunedin depends entirely on which part of town you are in. ## How our Dunedin collection service works — step by step 1. Free container assessment. We visit your Dunedin premises at no cost, look at your weekly output and your access, and recommend the container size and collection frequency that fit. In Dunedin we look at which calendar drives your trade — the university year or the cruise season — because they do not peak at the same time. 4. Certificate issued automatically. A digital disposal certificate arrives after every pickup, showing date and volume collected. Ready for your council, your insurer, your food safety audit or your sustainability reporting. ## The Dunedin kitchens we collect from - Restaurants: George Street, the Octagon, Princes Street - Cafés and bakeries: small-format containers for tight premises - Takeaways and fish and chip shops: the highest fryer turnover in the city, on the shortest intervals - Food trucks and mobile traders: flexible pickup points, no fixed address needed - Hotels, caterers and event venues: multi-site coordination, one invoice - School and hospital canteens: term-time cadence, full compliance documentation - Clubs, pubs and sports venues: event-driven volume, handled We collect used cooking oil and kitchen fat only. We do not collect engine oil, motor oil or automotive oil. ## What you get with every collection - Container supplied free: Drum, wheelie bin or 1000-litre pod, sized to your kitchen - Scheduled pickups: Predicted from your fill rate, not a fixed calendar - Certified recycling: Every litre to a certified processing facility. Nothing to landfill - FreshDrum option: Clean frying oil delivered on the same run — one partner, one invoice ## Switching to Full Drum in Dunedin Most of the Dunedin kitchens that call us already have a provider. ## Frequently asked questions — used cooking oil collection Dunedin ### Do I need a trade waste consent for my Dunedin restaurant? Yes. Dunedin City Council requires any business engaged in the cooking, preparation or sale of food to hold a trade waste consent. There is no volume threshold — the requirement attaches to the activity, so it applies to restaurants, takeaways, cafés, hotels, bakeries, butcheries, supermarkets and hospital kitchens alike. ### What kind of grease trap does Dunedin require? Dunedin City Council requires every food business to install and regularly maintain a system that removes fats, oils and grease from its wastewater, and recognises three types: passive grease traps, grease converters, and mechanical grease separators. Which is appropriate depends on your volume, layout and menu. If your kitchen has grown since the system was installed, it is worth having it reassessed. ### Do I still need a FOG system if you collect my oil? Yes. A grease trap or separator intercepts the incidental fat that comes off plates, pans and dishwashers. It is not a disposal route for spent fryer oil and was never designed to be — a kitchen that tips fryer oil into the sink will overwhelm a correctly sized system in a single service. Scheduled used cooking oil collection is what keeps your FOG system inside the load it was specified for. ### How do you schedule around the university semester? Our scheduling follows your kitchen's actual fill rate rather than a fixed date. A North Dunedin kitchen's interval stretches through November, December and January when the students are away, and tightens again from late February, with the start-of-semester spike accounted for. You do not need to tell us when term starts — the fill rate does. ### Do you collect during the cruise season? Yes, and the central city schedule tightens for it. Dunedin is scheduled for around 85 cruise visits in the 2026–27 season, up from 69 the previous season, with 43 of those ships able to carry at least 2,000 passengers. A large-ship day can put a week of covers through an Octagon or George Street kitchen in an afternoon, and the collection interval moves accordingly. ### Which Dunedin areas do you cover? Central Dunedin including George Street and the Octagon, North Dunedin and the University quarter, South Dunedin including King Edward Street and Andersons Bay, the Warehouse Precinct around Vogel Street, and St Clair and the Esplanade. We also collect across Mosgiel, Green Island, Port Chalmers, Roslyn, Mornington and the Otago Peninsula. We supply the container, we track how fast your kitchen fills it, and we schedule the pickup before it overflows. Queenstown is the only market in New Zealand with two full seasons and two dead ones, so a fixed collection date is wrong here four times a year — ours follows your real fill rate instead. Every litre goes to a certified processing facility, with a disposal certificate issued automatically. Used cooking oil collection in Queenstown, built for a town that never runs at one speed. ## Used cooking oil collection built for Queenstown kitchens Queenstown is the hardest scheduling problem in New Zealand hospitality, and almost nobody treats it like one. A Shotover Street restaurant runs flat out through July, empties in October, fills again by Boxing Day and empties again in May. That is not a busy season and a quiet season — it is four distinct operating states inside twelve months, and a collection calendar set in any one of them is wrong in the other three. Add the physical reality: a CBD kitchen with a back-of-house the size of a hallway, shared service lanes, restricted loading times, and the coldest working conditions in the country arriving in the same months as the biggest volume. Full Drum has collected used cooking oil and kitchen fat from New Zealand kitchens since 2008. In Queenstown that means our routing software follows your fill rate through every turn of the season, a container sized to your access rather than your annual average, and a disposal certificate issued automatically after every collection. Container supplied at no charge. No lock-in for the first three months. If you run a fryer between Glenorchy and Wanaka, we will come and get what comes out of it. ## What Queenstown's trade waste rules mean for your kitchen Queenstown Lakes District Council controls discharges to the district's wastewater network under the Integrated Three Waters Bylaw 2020, which superseded the earlier Trade Waste Bylaw 2014. Trade waste consents are required for discharges classified as Controlled or Conditional Trade Waste — a category most commercial kitchens in the district fall into. Where to check the detail: Queenstown Lakes District Council publishes the Integrated Three Waters Bylaw 2020, its grease trap information sheet and its trade waste consent process at qldc.govt.nz, and the trade waste team can be reached at trade.waste@qldc.govt.nz. If your premises are in Cromwell, Alexandra or Clyde you are under Central Otago District Council instead. This page is general guidance, not legal advice — confirm current requirements for your premises with the Council. Last reviewed: September 2026. ## Used cooking oil collection in Frankton Frankton is where Queenstown's commercial kitchens actually have room to work — and it is the easiest collection in the district by a wide margin. ## The Queenstown regions we collect from ### Frankton Areas: Frankton Flats, Remarkables Park, Five Mile, Glenda Drive, Queenstown Airport, Hawthorne Drive, Terrace Junction ### Queenstown CBD Areas: Shotover Street, Beach Street, The Mall, Camp Street, Rees Street, Steamer Wharf, Marine Parade ### Fernhill, Sunshine Bay & Kelvin Heights Areas: Fernhill, Sunshine Bay, Kelvin Heights, Queenstown Hill, Sunshine Bay Road ### Arrowtown & Lake Hayes Areas: Arrowtown, Buckingham Street, Lake Hayes, Lake Hayes Estate, Shotover Country, Millbrook ### Wanaka & the wider district Areas: Wanaka, Ardmore Street, Three Parks, Albert Town, Hāwea, Cardrona, Glenorchy Also collecting across Jack's Point, Hanley's Farm, Quail Rise, Arthurs Point and Glenorchy. Note that premises in Cromwell, Alexandra and Clyde fall under Central Otago District Council's own trade waste rules rather than Queenstown Lakes District Council's. ## Why Queenstown kitchens overflow — and how we stop it Most cooking oil collection services wait for you to call. That works right up until the week you are too busy to notice the container is full — which in Queenstown happens twice a year, reliably. ## How our Queenstown collection service works — step by step 1. Free container assessment. We visit your Queenstown, Frankton, Arrowtown or Wanaka premises at no cost, look at your weekly output and your access, and recommend the container size and collection frequency that fit. In Queenstown we size for your peak season, not your shoulder — the right container is the one that copes in July and in January. As the season turns, the interval turns with it. 4. Certificate issued automatically. A digital disposal certificate arrives after every pickup, showing date and volume collected. Ready for your council, your insurer, your food safety audit or your sustainability reporting. ## The Queenstown kitchens we collect from - Restaurants: Queenstown CBD, Arrowtown, Frankton - Cafés and bakeries: small-format containers for tight premises - Takeaways and fish and chip shops: the highest fryer turnover in the city, on the shortest intervals - Food trucks and mobile traders: flexible pickup points, no fixed address needed - Hotels, caterers and event venues: multi-site coordination, one invoice - School and hospital canteens: term-time cadence, full compliance documentation - Clubs, pubs and sports venues: event-driven volume, handled We collect used cooking oil and kitchen fat only. Yes. Full Drum collects across Frankton, the Queenstown CBD, Fernhill, Kelvin Heights, Arrowtown, Lake Hayes and Wanaka, and out to Glenorchy and Hāwea. Full Drum services all of New Zealand, North Island and South Island, on scheduled routes. Call 0508 385537 to confirm the next available collection in your area. ### Why is Frankton easier to collect from than the Queenstown CBD? Frankton premises generally have off-street access, roller doors and service yards, which means larger containers are viable and collections are quick. Queenstown CBD kitchens have small back-of-house areas, shared service lanes and time-restricted loading, so container choice there is decided by what can physically leave the premises within the available window — often two smaller containers rather than one large one. ### How do you handle Queenstown's two seasons? Our scheduling follows your actual fill rate rather than a fixed date. Queenstown has a winter peak from roughly June to September and a summer peak from roughly December to February, with quiet shoulder periods in May and October–November. When your fill rate climbs the next collection moves forward automatically; when it drops the interval stretches. That happens four times a year without you having to arrange anything. ### Does the cold affect used cooking oil in Queenstown? Yes, and Queenstown is the only market where it matters most during the busy season. Used cooking oil and beef tallow thicken as temperatures fall and can effectively solidify in a hard frost. Because Queenstown's coldest months are also its busiest, we site containers somewhere sheltered and secure, size them for what can be handled cold, and shorten the collection interval through winter so nothing sits long enough to set. ### Do I need a grease trap in Queenstown? Almost certainly. Under the Queenstown Lakes District Council Integrated Three Waters Bylaw 2020, a grease trap must be installed and maintained wherever trade waste includes, or is likely to include, fats, grease or oils in excess of 100 grams per 1,000 litres each day. That threshold captures essentially any commercial fryer operation. Marae, churches, public halls and school catering kitchens are also required to fit grease traps and hold a trade waste consent. ### Can I pour used cooking oil down the drain in Queenstown? No. Discharges to the Queenstown Lakes wastewater network are controlled under the Integrated Three Waters Bylaw 2020, and fats, oils and grease from commercial kitchens are covered. Spent fryer oil must be collected separately — a grease trap is for incidental fat off plates and pans, not for fryer oil. ### Do you collect in Wanaka and Arrowtown? Yes. Wanaka is scheduled on its own route rather than as an add-on to a Queenstown run, covering the Ardmore Street lakefront, Three Parks, Albert Town, Hāwea and Cardrona. Arrowtown, Lake Hayes, Lake Hayes Estate and Millbrook are on the Queenstown district route.
